."It's a labor of love. I grow my own fruit, source the best organic chocolate I can find and attempt to compete with the "big dogs" of the chocolate industry. I am holding my own through sheer dedication and perseverance. In just three short years I have become well known across the country for my subtle ganaches, decadent bon bons and luscious small batch jams. All of our chocolates are made with an Organic Single Origin chocolate from Costa Rica. It is grown on a Certified organic estate in Costa Rica and is harvested and processed by a co-operative of farmers who receive wages that are 2-3 times the minimum wage - representing a sustainable income, as well as health care and other benefits. The estate serves as a wildlife corridor offering refuge to native species, maintaining a natural balance of diverse rainforest plants and harvesting methods without negative environmental impacts.
